How to Make the Perfect Hard Boiled Egg

 Stumbled upon this video the other day about how to make the perfect hard boiled egg.  The key?  "Don't hard boil it!"  What?!  I used to stick them in a pot of boiling water for 20 minutes.  It turns out I've been doing it completely wrong.  I've been over-cooking my eggs.  In this video she instructs us to raise the water to boiling point and then lower heat to a simmer for ten minutes.  Then you'll need to follow her instructions about placing them in ice water.  Turns out, this process makes a "hard boiled egg" with a perfect yellow color, and easy to peel.  Whoever knew ICE WATER was the key to boiling an egg?  Well, I'm super excited about knowing this now, because it won't only cut the cooking time way down but it makes my favorite type of egg....perfect!
